Ingredients

  • ¼ cup water
  • 1 Tbsp olive oil
  • 2 large garlic cloves, sliced or minced
  • pinch red pepper flakes
  • sea salt to taste
  • grated parmesan optional
  • 2 (heaping) cups chopped broccoli florets

Instructions

  1. Add the water, olive oil, garlic, and red pepper flakes to a large pan. A pan about ten inches in diameter and a couple of inches deep works well.
  2. Bring the mixture to a boil, then add the broccoli florets.
  3. Reduce the heat to a gentle simmer and cover the pan with a fitted lid.
  4. Steam the broccoli for three minutes, keeping the heat low so it cooks through without becoming mushy.
  5. Turn off the heat and remove the pan from the burner, leaving the lid on to let the broccoli finish cooking with residual steam.
  6. Let the broccoli sit, covered, for another two minutes. This helps it become tender but still bright green.
  7. Remove the lid and stir the broccoli. The water should have evaporated; if any remains, cook briefly to reduce it. Season with sea salt to taste.
  8. Serve immediately. If desired, top with a light sprinkle of grated parmesan for added flavor.
