Ingredients

Coconut Macaroons

  • 4 Egg Whites
  • 1 pinch Salt
  • 1 teasp. Vanilla Extract
  • 3 tbsp. Brown Sugar
  • 2 1/2 cup Shredded Coconut

Chocolate Drizzle

  • 1/2 cup Dark Cooking Chocolate
  • 1/4 cup Milk, I used Soy but any milk will do

Instructions

Coconut Macaroons

  • Turn your oven on 130°C (265°F).
  • Separate the Egg Whites and Yolks and place the Egg Whites in a large, clean bowl. Ensure no yolk gets into the whites.
  • Add the Pinch of Salt and Vanilla Extract then start beating with a hand mixer on medium speed.

    Gradually add the Brown Sugar (one tablespoon at a time) as soon as the Egg Whites start to get foamy, while still beating the eggs continuously.

    Keep beating until hard, glossy peaks form and the meringue is firm and holds its shape.

  • Gently fold in the Shredded Coconut manually, one cup at a time, being careful not to over mix the batter to avoid breaking the meringue and deflating the air.

    You should end up with a very light batter that can hold its shape. If the batter seems too liquid to roll into small balls, keep adding a little more Shredded Coconut until it reaches a scoopable consistency.

  • Line a large flat baking tray with Baking Paper or a silicone mat.

    Form small balls with your hands, using your palms to shape them into neat mounds.

    Alternatively, you can use a small ice cream scoop or a tablespoon to form uniform balls. Place them a few inches apart on the prepared tray.

    Bake for 15 to 20 minutes, or until the Macaroons turn a beautiful golden color on the edges. Remove from the oven and let them rest on the tray until completely cool before handling.

Chocolate Drizzle

  • In the meantime, place the Milk (soy milk or any other dairy-free milk works well) in a small pot on low heat and warm up the milk until it’s steamy but not boiling. Remove from the heat.
  • Place the Dark Cooking Chocolate (chopped or chips) into a heat-proof bowl. Pour the warm milk over the chocolate and let it sit for 1-2 minutes to soften. Then, stir gently with a spatula or whisk until the chocolate is completely melted and smooth, forming a glossy ganache.
  • Let the Ganache cool down a bit at room temperature. You do not want to use chocolate that is too warm; it could melt the macaroons and run off. The consistency should be pourable but not watery.

    Once the macaroons are completely cool, drizzle the chocolate over them using a spoon or a piping bag with a small hole. Let them rest until the Chocolate has fully set before serving or storing.
