Instructions

Prepare Muffin Cups

  • Preheat oven to 350°F (175°C).
  • Lightly grease the interior of 24 muffin cups (across two 12-cup muffin pans) with 2-3 teaspoons of olive oil. You can dab a paper towel in the oil or use a basting brush. Again, I highly recommend using silicone muffin pans for best results.

Cook Veggies

  • In a skillet on the stove, heat 1 tablespoon of olive oil over medium-high heat until it shimmers. Add the diced red peppers and sliced green onions and cook, stirring occasionally, until softened, about 5 minutes.
  • Distribute about a tablespoon of the cooked red pepper and onion mixture into each prepared muffin cup. Top each with about a tablespoon of grated Monterey Jack cheese.

Mix Egg Filling

  • In a blender, food processor, or using an immersion blender, combine the eggs (6 whole eggs + 2 egg whites), cottage cheese, Greek yogurt, flour, Sharp Cheddar cheese, salt, and white pepper. Blend until the mixture is completely smooth and well-combined.
