OR Drain the Canned Corn (if using canned)
- If you are opting for the convenience of canned corn, you can skip the steaming step above. Simply open two 15-ounce cans of sweet corn and drain the liquid thoroughly. You should yield approximately 3 cups of corn, and it’s perfectly fine if the amount is slightly more or less.
Place the drained corn directly into a large mixing bowl.
Chop and Dice the Vegetables
- Rinse all your fresh vegetables thoroughly. Proceed to slice and dice the celery, green onions, peeled cucumber, green pepper, red pepper, and fresh parsley into small, uniform pieces. Aim for a size similar to that of your corn kernels and pasta to ensure a harmonious texture in every bite. Add these prepared vegetables to the large bowl with your corn. Incorporate the fresh garlic at this stage, either pressed or very finely chopped, tossing gently to distribute evenly.
Combine all Ingredients
- Retrieve the reserved half of the salad dressing and pour it over the mixed vegetables in the large bowl. Give everything a good toss to ensure the vegetables are well coated. Then, add the chilled Orzo pasta to the bowl.
Gently stir all the ingredients together until everything is uniformly combined and coated with the tangy dressing. The salad is technically ready to serve right away, but for the absolute best flavor experience, cover the bowl and chill it in the refrigerator for at least 3-4 hours, or ideally, overnight. This resting period allows the flavors to deepen and meld beautifully.
