  • ¾ cup green onionsdiced – divided, save ¼ cup for topping

Instructions

  • Bake the Potatoes and Prep Ingredients
  • Preheat oven to 425°F (220°C). Scrub and rinse 4 large Russet potatoes thoroughly and use paper towels to pat each one completely dry. Place the potatoes on a baking sheet lined with parchment paper. Using a pastry brush, spread the olive oil on each potato then sprinkle generously with a few dashes of salt and pepper. Bake for one hour or until the internal temperature reaches 210°F (99°C).
  • While the potatoes are baking, take the opportunity to prepare your other ingredients. Shred the cheddar cheese, cook and crumble the bacon until crispy, and finely chop the green onions. Set these prepared ingredients aside in the refrigerator until needed.
  • Once the potatoes are perfectly baked, carefully remove them from the oven. Let them cool for a few minutes on the baking sheet or a wire rack until they are cool enough to handle comfortably without burning your hands.
  • Prepare a 13″ x 9″ baking dish (or a similar sized casserole dish) by spraying it with cooking spray (like Pam) or lightly greasing it with shortening or butter. This will prevent the potato mixture from sticking.
  • Adjust the oven temperature down to 350°F (175°C) for the second baking phase.
  • Carefully place the slightly cooled potatoes onto a clean cutting board. Use a sharp knife to slice them into large chunks or wedges. This step is important for breaking up the potato peels into smaller, more manageable pieces, which will blend better into the mash and ensure a more pleasant texture.

Combine Ingredients

  • Transfer all the sliced potato chunks into a large mixing bowl. Use a sturdy potato masher to blend and smash all four of the potatoes until they reach your desired consistency. You can leave some small chunks for a rustic feel or mash until smooth.
  • Add all the remaining ingredients (except the reserved portions for topping) to the large bowl with the mashed potatoes: the majority of the grated cheddar cheese, sour cream, cooked and crumbled bacon, most of the diced green onions, butter, salt, and pepper. Stir everything well to thoroughly combine until all ingredients are evenly distributed and the mixture is creamy and consistent. Remember to save ½ cup of the grated cheese and ¼ cup of the diced green onions for the final topping!

Bake

  • Carefully spread the thoroughly combined potato mixture into your prepared 13″ x 9″ baking dish. Cover the baking dish tightly with aluminum foil and place it in the preheated 350°F (175°C) oven. Bake for 30 minutes. This allows the flavors to meld and the dish to heat through evenly.
  • After 30 minutes, carefully remove the dish from the oven. Uncover it and evenly sprinkle the reserved grated cheese and green onions over the top of the hot potato mixture. Return the uncovered dish to the oven and continue baking for another 20 minutes, or until the cheese is beautifully melted and bubbly, and the edges of the potatoes are lightly golden and simmering.
  • Optional Serving Suggestion: For an extra touch of creaminess and tang, offer additional sour cream on the side for guests to spoon onto each serving as desired.

Notes

Other Potato Varieties: While I highly recommend Russet potatoes for their fluffy texture, red potatoes or Yukon Gold can be used as good substitutions. For these varieties, it’s best to boil approximately 2 pounds in a large stockpot with about 2 quarts of salted water until fork-tender, then drain and mash.
