Keto Pork Belly is a delightful dish that shines when served with crispy green onion, zesty lime wedges and a scattering of flaky salt. These golden, flavorful bites work equally well as a satisfying main or an irresistible appetizer.
This version was inspired by a ramen-style pork belly and by Japanese methods of gently cooking meat in a shallow bath of seasoned liquid. Traditional soy sauce can be problematic for some following a strict ketogenic or gluten-free approach, so I suggest using liquid aminos or a soy-free alternative if you prefer. If soy is fine for you based on your own dietary testing, it will work well in this recipe.

The technique produces pork belly that’s super crispy on the skin side while remaining juicy and tender inside. That contrast is achieved by slow roasting in the oven followed by a quick sear in a hot pan, which creates an irregular, satisfying crunch and deep, salty flavor you can’t get from pan frying alone.
Marinating the pork belly in a shallow bath allows the meat to absorb flavor while keeping the skin dry. This preserves moisture during roasting and prevents the meat from drying out. The approach works especially well for robust proteins like pork and chicken that can handle strong flavors.

Ingredients
- 500 g Pork Belly Skin On
- 1/4 Cup Liquid Aminos or Soy Sauce
- 1/4 Cup Water
- 2 Cloves Garlic Crushed
- 2 Tablespoons Erythritol
- 2 Tablespoons Oyster sauce
- 1 teaspoon Smoked Paprika
- 1 Tablespoon Peppercorns
- 5 Shallots Sliced
- Lime – To Taste
Instructions
- In a large, flat dish (large enough to lay the pork belly inside), place the pork belly skin-side up.
- In a small bowl, combine the liquid aminos, water, crushed garlic, erythritol, oyster sauce, smoked paprika and peppercorns.
- Pour the mixture into the dish with the pork belly, keeping the liquid shallow so it does not reach the skin.
- Cover and refrigerate overnight to let the flavors penetrate.
- Preheat the oven to 180°C (355°F). Place a rack on a foil-lined baking tray and pour ½ cup water into the tray.
- Remove the pork from the marinade, place it on the rack, coat the skin generously with salt and roast for 40 minutes.
- Increase the oven temperature to 200°C (390°F) and roast another 30 minutes until the top is blistered and crispy.
- Remove from the oven, slice into roughly 2-inch cubes, then sear each piece in a hot frying pan until both sides are crisp.
- Pour some of the leftover marinade into the pan and let it bubble for 3–5 minutes. Add the sliced shallots and cook for 1 minute to soften.
- Remove from the pan and serve immediately with fresh lime wedges.
