Crispy Herb-Roasted Potatoes with Garlic and Parmesan

Recipe Directions:

Cube potatoes into roughly 1/2-inch pieces and place them in a bowl. Toss with olive oil until evenly coated. Lightly oil a baking dish and spread half of the potatoes in a single layer. Sprinkle with half of the grated Parmesan and half of the herb blend. Add the remaining potatoes in a second layer, then top with the remaining cheese and herbs. Cover the dish with foil and bake at 350°F for one hour, or until potatoes are tender and edges are slightly golden.
