After being diagnosed with a dairy allergy, I assumed Alfredo sauce was off the table. The thought of giving up the creamy, cheesy flavor of Parmesan in a classic Fettuccine Alfredo was disheartening. For years I avoided the dish, until a friend reminded me she had a dairy-free version that tasted just like the real thing.

I remembered enjoying her family’s Fettuccine Alfredo and being surprised it was dairy-free. When she shared the recipe, I was eager to try it—and pleasantly surprised by how close it came to the original.

The Base of Dairy Free Alfredo Sauce

You can soak your cashews overnight, but if you have an Instant Pot pressure cooker they will be ready to process in less than 20 minutes!

This sauce’s creamy texture comes from cashews. When blended, cashews turn into a silky, rich base perfect for dairy-free cream sauces. For the smoothest result, soak cashews overnight so they absorb water and soften.

If you forget to soak them overnight, an Instant Pot pressure cooker is a great shortcut. It delivers fork-tender cashews in minutes, avoiding the need to plan ahead.

To achieve the same tender texture as overnight soaking, I use the Instant Pot. I place the cashews in the inner pot, cover them with water, and pressure cook on High for 7 minutes. After a brief natural release and a quick release of remaining pressure, they drain easily and are ready to blend.

This method reduces what would normally take 12+ hours to less than 15 minutes—perfect when you want Alfredo now.

After soaking or pressure-cooking, add the cashews and the remaining ingredients to a high-powered blender and puree until smooth. A powerful blender—such as a Vitamix, Blendtec, or a comparable model—gives the creamiest texture. If you don’t have one of those, blend long enough and add small amounts of warm water to reach the desired consistency.

I had hesitated to invest in an expensive blender because of limited use, so the Instant Pot Ace Blender was a welcome, more affordable option. It arrived quickly and worked well for this recipe.

Blend and Heat At The Same Time

The original instructions suggest pureeing the mixture and then heating it in a saucepan. However, the Instant Pot Ace Blender can both puree and heat, which saves time and reduces cleanup. Using the blender’s puree and heat settings, the sauce can be pureed and served hot in minutes—no transfer to a pot required.

That convenience made it even easier to enjoy a quick, satisfying Fettuccine Alfredo that’s dairy-free but still rich and flavorful.

A smooth, creamy Alfredo sauce made from cashews that delivers a rich, cheesy flavor without dairy.

Ingredients

  • 1 cup raw cashews
  • 3/4 cup water
  • 1/2 Tbsp. lemon juice
  • 3 cloves garlic, peeled and roughly chopped
  • 1/2 cup diced onion
  • 2 Tbsp. nutritional yeast
  • 1 tsp. garlic salt
  • 1/4 tsp. ground thyme
  • 1/4 tsp. ground black pepper
  • 1/8 tsp. red pepper flakes

Instructions

Soaking Cashew Options

  1. Cover cashews with water and soak overnight (or at least 10 hours).
  2. Or place cashews in the Instant Pot liner, cover with water, and pressure cook on High for 7 minutes. Allow 5 minutes natural release, then quick release remaining pressure. Drain in a colander.

Blending Options

  1. Add all ingredients into a high-powered blender. Puree until smooth, then heat the sauce in a small saucepan and serve immediately over noodles, potatoes, or vegetables.
  2. Or place the ingredients in an Instant Pot Ace Blender, select the Puree setting on level 2, and blend/heat until hot. Serve immediately.
