Happy first official days of fall! The weather has been feeling like autumn for a while now, and I’m hoping it sticks around for a few more weeks before winter arrives. With the season change comes back-to-school routines and a need for quick, reliable weeknight meals. On those hectic days when I’m running between home, schools, and activities, dinner needs to be fast—and these air fryer turkey quesadillas fit the bill perfectly.
I only fully embraced the air fryer after moving into our new kitchen where it finally has a permanent spot. Having it easily accessible makes preparing simple meals so much easier, and quesadillas are one of my go-to fast dinners.

How do you make air fryer turkey quesadillas?
These quesadillas are very easy to make. Start by cooking a boneless, skinless turkey breast and then shredding it. Drizzle 2 teaspoons of olive oil into a medium frying pan and warm it over medium heat. Add the turkey breast, cover the pan, and cook for about 10–12 minutes. Flip the breast and cook another 10 minutes, or until an instant-read thermometer reads 165°F in the center.

Transfer the cooked turkey to a cutting board and shred it with two forks. Return the shredded turkey to the pan, add 2 tablespoons of taco seasoning (homemade or store-bought), and stir over low heat for a minute or two until the seasoning is well combined. Set the seasoned turkey aside while you assemble the quesadillas.

For each quesadilla you will need:
- diced red bell pepper (optional)
- shredded cheddar and mozzarella cheese
Preheat the air fryer to 325°F. Lay a large flour tortilla flat and on one half sprinkle about 2 tablespoons cheddar and 1 tablespoon mozzarella. Add roughly 1/4 cup of the seasoned turkey and 1 tablespoon diced red pepper, then top with another 2 tablespoons cheddar and 1 tablespoon mozzarella. Fold the tortilla in half. Because the air fryer circulates air, secure the folded quesadilla with one or two toothpicks to keep it closed.
Lightly spray the quesadilla with nonstick cooking spray. Place it in the preheated air fryer and cook for 3 minutes. Open the basket, flip the quesadilla, and cook another 1–2 minutes until the cheese is melted and the tortilla is lightly browned and crisp. Repeat the process with the remaining tortillas. Remove cooked quesadillas to a cutting board, slice in half, and serve.

We like sour cream, salsa, and guacamole alongside these quesadillas. A fresh pineapple avocado salsa is a great pairing if you have the ingredients on hand. Add extra jalapeño if you enjoy some heat. Use whichever dips and toppings you prefer.

- Preheat the air fryer to 325°F. On one half of a tortilla, sprinkle 2 tbsp cheddar and 1 tbsp mozzarella. Add ¼ cup cooked turkey and 1 tbsp diced red pepper, then top with 2 tbsp cheddar and 1 tbsp mozzarella. Fold the tortilla and secure with a toothpick. Lightly spray with nonstick spray and place in the air fryer.
- Cook the quesadilla 3 minutes on one side, flip, and cook 1–2 minutes more until cheese is melted and the tortilla is crisp. Repeat with remaining tortillas. Slice and serve with desired dips.
Quesadillas will keep in an airtight container in the refrigerator for up to 3 days. Reheat in a microwave or enjoy cold.
Notes
Homemade Taco Seasoning
Mix together and use in the recipe:
- 2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp dried oregano
- 1/4 tsp paprika
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground pepper
Use leftover turkey if you have it—simply warm the meat with the taco seasoning before assembling.
