Easter and spring occasions are great excuses to make bright, cheerful treats that bring people together. This year we were excited to see Enjoy Life bring back their popular minis for the season. Crispy Rice Nests

The nests are made from classic crispy rice treats, molded into small bowls, and then filled with colored coconut “grass” and chocolate-dipped eggs. To make the eggs, shape small portions of the crispy rice mixture into egg shapes and dip them in melted chocolate, then add sprinkles while the chocolate is still wet. You can tuck an extra Enjoy Life mini into each nest for an added surprise. These nests are sturdy enough to display on a table and soft enough that kids love forming them by hand.

Ingredients

  • 1/4 cup dairy-free butter
  • 10 oz marshmallows
  • 5 cups gluten-free crispy rice cereal
  • 1 cup shredded coconut
  • Green food coloring (a few drops)
  • 1 cup chocolate chips or chopped chocolate, melted
  • Sprinkles, for decorating
  • Enjoy Life Minis (optional), for garnish

Instructions

  1. Melt the dairy-free butter in a large saucepan over medium heat.
  2. Add the marshmallows and stir until fully melted and smooth.
  3. Remove from heat and stir in the gluten-free crispy rice until evenly coated.
  4. Turn the mixture out onto a sheet of wax paper and allow it to cool until it is safe to handle but still pliable.
  5. When cool enough, form portions into nest shapes by pressing the mixture into small bowls or by shaping with your hands. For egg shapes, press the mixture inside empty plastic Easter eggs to get a smooth oval form, then carefully remove.
  6. To make the coconut “grass,” place shredded coconut in a bowl and add a few drops of green food coloring, mixing until evenly tinted.
  7. Fill each nest with a small handful of the colored coconut to create a grassy base.
  8. Dip the crispy rice eggs into melted chocolate, then roll or sprinkle with your chosen decorations while the chocolate is still wet. Allow the chocolate to set on a piece of wax paper.
  9. Place the decorated eggs in the nests and add an Enjoy Life Mini to each nest for an extra treat.
  10. Store finished nests in an airtight container at room temperature for up to a few days, or refrigerate briefly to speed chocolate setting.

Notes
