Ingredients

  • 1 package of Pillsbury reduced-fat crescent rolls
  • 4 oz cooked diced chicken
  • 3 T real bacon crumble
  • 1/4 cup light cream cheese
  • 1/3 cup light shredded mozzarella-cheddar blend

Instructions

  • Preheat the oven to 350°F and spray a 24-cup mini muffin pan with nonstick spray.
  • Roll out the crescent roll dough with a rolling pin. Cut the dough into small squares large enough to line each mini muffin cup — a pizza cutter works well. One package of eight crescent rolls yields enough pieces to fill 24 mini cups.
  • In a small bowl, combine the cooked diced chicken, bacon crumble, light cream cheese, and shredded cheese. Mix until evenly combined, then divide the filling evenly among the 24 dough-lined muffin cups.
  • Bake for about 8–10 minutes, watching closely so they don’t burn. Once baked, lightly drizzle with ranch dressing — 1–2 tablespoons in a small zip-top bag is enough to drizzle across the batch. Each bite is approximately 2 SmartPoints or 1 PointPlus.
