Ingredients

  • ½ cup celery – diced
  • ¼ cup onion – sliced and diced
  • 1 tablespoon butter
  • 4 cups herb-seasoned stuffing mix
  • 1 can cream of chicken soup – 10 ½ ounce sized can, undiluted, divided
  • 1 cup chicken broth
  • 1 egg – whisked
  • 1 rotisserie chicken – meat shredded and chopped, or use about 2 ½ – 3 cups of cooked chicken or use leftover turkey
  • ½ cup milk
  • 2 tablespoons chopped pimiento
  • ¼ cup fresh parsley (optional for garnish) – chopped fine

Instructions

  • Preheat oven to 350°F (175°C) and generously spray an 11″ x 7″ baking dish with cooking spray or grease lightly. A square 9″ x 9″ dish or any 2-quart baking dish will also work perfectly. For larger batches or if adding extra ingredients, a 9″ x 13″ pan is a better option (refer to the Pro Tip above).

Prepare Stuffing

  • In a large skillet on the stovetop, melt 1 tablespoon of butter over medium-high heat. Add the diced celery (½ cup) and onion (¼ cup) and cook for about 3 minutes until softened and fragrant. Reduce heat to low, then stir in the 4 cups of herb-seasoned stuffing mix and ½ of the contents from the canned cream of chicken soup (undiluted).Turn off the heat. Add 1 cup of chicken broth and 1 whisked egg. Stir well to combine all ingredients until the stuffing is thoroughly moistened.If you are including any additional ingredients such as extra vegetables (like carrots, peas, or green beans), dried cranberries, or raisins for variation, blend them into the stuffing mixture at this stage.

  • Transfer the prepared stuffing mixture from the skillet into your greased baking dish, spreading it evenly to form the bottom layer. Then, evenly top the stuffing with your 2 ½ to 3 cups of diced, cooked chicken or turkey.

This crucial resting period allows the stuffing to set up properly, helps the casserole maintain its structure when served, and allows all the wonderful flavors to fully meld.Uncover and, if desired, sprinkle the top of the casserole with ¼ cup of freshly chopped parsley for a touch of vibrant freshness and color.
