If you want a simple vegan dinner that satisfies both vegetarians and meat-eaters, these barbecue cauliflower tacos deliver. The filling is hearty and filling, and the recipe is flexible so you can use whatever you have on hand.

Try adding sautéed zucchini, shredded cabbage, or diced roasted sweet potato. For more protein, stir in chickpeas, smoked tofu, soyrizo, or black beans.

I like to serve the tacos in warmed whole-grain tortillas, but they also work great in lettuce wraps if you’re following a low-carb or keto plan. The cauliflower filling is tasty on its own, too.

Cauliflower Tacos

Ingredients

  • 1 large head cauliflower, cut into florets
  • oil or spray
  • 1/2 cup flour or almond meal
  • 1/2 tsp onion powder
  • 6 tbsp milk of choice
  • optional 1 cup breadcrumbs, crushed finely
  • 2-6 tsp oil or butter
  • 1 cup barbecue or buffalo sauce
  • toppings of choice such as red cabbage, salsa, lime, ranch, cilantro, or avocado
  • 8 taco shells, lettuce cups, or tortillas

Instructions

  • Gather ingredients. Preheat oven to 425°F (220°C). Line a baking pan with parchment paper. Toss cauliflower florets with a little oil or spray lightly. In a large bowl or zipper bag, combine flour and onion powder; add the florets and toss to coat. Stir in milk, then add breadcrumbs if using, and toss until evenly coated.

    Arrange florets in a single layer on the prepared pan, making sure not to crowd them. Bake for 25 minutes. Meanwhile, mix the barbecue or buffalo sauce with oil or melted butter (a bit of fat helps the sauce cling to the cauliflower). Remove the pan, dip or brush florets with sauce, and return to the oven for 15 more minutes. For extra crispiness, broil for an additional 3–5 minutes — watch closely so they don’t burn.

    Divide the sauced florets into taco shells or wraps, add desired toppings, and serve hot.

Notes

For a sweet finish, try a light chia pudding or another simple dessert.
