  • 1/2 cup (120gr) Unsalted Butter
  • 1 tbsp Instant Coffee Powder (optional, enhances chocolate flavor)
  • 4 Eggs, separated
  • 1/4 cup (50gr) Brown Sugar
  • 1/2 cup (50gr) Almond Meal
  • 3 tbsp (30 gr) Unsweetened Cacao Powder
  • 1 pinch Salt

Instructions

  • Preheat your oven to 180°C (350°F). Prepare a round springform pan (approx. 8-inch or 20cm) by lining the bottom with baking paper and greasing the sides.
  • In a heatproof bowl, melt the dark chocolate and butter together. You can do this in the microwave (stopping every 30 seconds to stir until fully melted and smooth) or over a double boiler.

    While the mixture is still hot, stir in the instant coffee powder (if using) until fully dissolved. Set aside to cool slightly.

  • Prepare two large, clean bowls. Carefully separate the egg whites from the egg yolks, placing each into a separate bowl.

    To the bowl with egg yolks, add the brown sugar. Whisk vigorously for a few minutes until the mixture becomes frothy, bubbly, and lightens in color.

  • Gradually pour the slightly cooled melted chocolate and butter mixture into the egg yolk and sugar batter, whisking constantly until well combined and smooth.
