This past week I finished my Christmas shopping and sent out our holiday cards. With favorite recipes bookmarked and the kitchen ready, I’m feeling excited for the season. There’s something especially cozy about baking and assembling desserts while the lights are on and the gifts are wrapped.
My son Charlie absolutely loves gingerbread, so I surprised him last weekend with individual Gingerbread Trifles. One of the jars even got a little pink bow for Miss Claire. These trifles are a festive, make-ahead holiday dessert that combines crunchy ginger cookies, a creamy gingerbread cheesecake filling, and homemade whipped cream layered in mason jars for a charming presentation.

This recipe uses warm spices—ginger, cinnamon, and a touch of clove—paired with molasses and a silky cream cheese filling. The contrast of textures, from cookie crumbs to smooth filling and light whipped cream, makes these trifles a hit at holiday parties and family gatherings. They’re also perfectly portioned when made in wide-mouth pint mason jars, making them great for gifting or serving at a potluck.

Gingerbread Trifle

Ingredients
Homemade Whipped Cream
- 16 oz heavy whipping cream
- 1/4 cup powdered sugar
Gingerbread Cheesecake Filling
- 16 oz cream cheese
- 1/2 cup sugar
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 2 pinches ground clove
- 2 tablespoons molasses
- 1/4 cup whole milk
- 2 cups homemade whipped cream (from above)
Trifle Assembly
- 3 bags Gingerman cookies (or other ginger cookies)
- Store-bought caramel (for drizzling)
- 7 wide-mouth pint-sized mason jars (or similar serving glasses)
Instructions
1. Homemade Whipped Cream
- In a stand mixer fitted with the whisk attachment, add the heavy cream and powdered sugar. Whisk on medium-high speed until stiff peaks form, roughly 4–5 minutes.
- Stiff peaks are reached when the whipped cream holds its shape: lift the whisk and the peak stands straight up without collapsing.
2. Gingerbread Cheesecake Filling
- In a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar on high speed for 2–3 minutes until smooth. Scrape the bowl and paddle once during mixing to ensure even texture.
- Add the ground ginger, ground cinnamon, ground clove, molasses, and whole milk. Mix on low speed for about 30 seconds, then increase to medium until the mixture is smooth and fully combined.
- Gently fold in 2 cups of the prepared homemade whipped cream until light and airy.
3. Assemble the Gingerbread Trifles
- Place 2 bags of Gingerman cookies into a large gallon-sized resealable bag and crush them using a rolling pin or your hands. Aim for mostly crumbs with some larger cookie chunks for texture.
- Spoon a small layer of crushed cookies into the bottom of each mason jar—this is the first layer of the trifle.
- Add a generous spoonful of gingerbread cheesecake filling to cover the cookie layer.
- Top the filling with a spoonful of whipped cream.
- Drizzle a small amount of caramel over the whipped cream for a sweet finish.
- Repeat the cookie, filling, whipped cream, and caramel layers until the jar is full, finishing with a whipped cream layer.
- Garnish each trifle with a whole Gingerman cookie stuck into the top, or add a sprinkle of crushed cookie crumbs for decoration.
Tips, Storage, and Variations
These gingerbread trifles are ideal for preparing a few hours in advance or up to a day ahead. Store covered in the refrigerator to keep the layers firm and fresh. If you plan to transport them for a party, seal the jars with lids.
For a lighter variation, substitute part of the cream cheese with mascarpone or use low-fat cream cheese and reduce the sugar slightly. To add extra texture, fold in toasted pecans or sprinkle chopped nuts between layers. For a boozy adult version, add a tablespoon of spiced rum or dark rum to the cheesecake filling.
Serving these in individual jars makes them convenient and visually appealing. They are excellent as holiday gifts: tie a small ribbon around each jar and add a handwritten tag with reheating and serving suggestions.
Why This Gingerbread Trifle Works
The combination of spiced ginger cookies, tangy-smooth cheesecake filling, and airy whipped cream creates a balanced dessert where each bite delivers spice, creaminess, and crunch. The molasses and warm spices give that classic gingerbread flavor, while the mason jar presentation keeps portions controlled and festive.
Enjoy these gingerbread trifles at holiday gatherings, Christmas brunches, or as a special treat for family dessert nights. They’re a simple but impressive dessert that brings traditional holiday flavors into an easy-to-serve format.
