S’mores are a crowd-pleaser and a hot cross bun adds a spiced, fruity twist that lifts them to the next level. This version is perfect for feeding several people at once and needs only two extra ingredients: marshmallows and chocolate.

Process shots: halve bun, toast halves under the grill, add marshmallows to one half and chocolate to the other, then return under the grill briefly before squishing together.

2. Hot Cross Bun Bacon Sandwich

It might sound unusual, but salty bacon pairs beautifully with the spicy, fruity notes in a hot cross bun. The contrast of crisp bacon and soft bun is a winner. A light drizzle of maple syrup brightens the flavours, though it’s optional.

Process shots: melt butter in a pan, cook the bacon to your liking, remove the bacon and toast the buns in the leftover fat, then assemble and optionally drizzle with maple syrup.

3. Hot Cross Bun Ice Cream Sandwich

This is for anyone with a sweet tooth: spread Nutella on the bun, top with a generous scoop of vanilla ice cream, and finish with crushed mini eggs for crunch. It’s indulgent and seasonal — a great dessert sandwich.

Process shots: crush the mini eggs in a bag with a rolling pin, slice the bun, spread Nutella on the base, add and shape the ice cream, then sprinkle over the crushed eggs and top with the other bun half.

Notes

a) S’mores sandwiches – Use any chocolate you prefer, including chocolate chips. If the filling is too runny after grilling, let it rest a minute to firm up before pressing together.
b) Bacon Sandwich – You can also bake or grill the bacon. If you do, spread the buns with butter and toast them under the grill for the same flavour boost.
c) Ice Cream Sandwich – Vanilla ice cream lets the Nutella and mini eggs shine, but feel free to use your favourite flavour. For a firmer treat, mix the crushed eggs with the ice cream and refreeze briefly.
d) Calories – The nutrition info is an estimate based on the bacon sandwich with 1/2 tbsp butter.
