Huevos Rancheros — 3 WW Points

Start with a lighter option that still feels satisfying. This version of huevos rancheros is heart-healthy and, on my Freestyle plan, counts as only three Weight Watchers points. It’s a guilt-free favorite in my breakfast rotation.

Ingredients

4 eggs 0 points
4 small corn tortillas (6 inch) 2 points each
1 can black beans (15 oz) 0 points
1 cup tomatillo sauce (green sauce) 0 points
4 oz low-fat cheese 1 point per oz
2 T chopped cilantro 0 points
Cooking spray 0 points

Instructions

Preheat the oven to 200°F.

Reserve 2 tablespoons of the liquid, drain the black beans, and blend the beans with the reserved liquid until smooth. Warm the bean puree in a saucepan over low heat.

Heat the tomatillo sauce in a small pan or microwave until warm.

Lightly spray a griddle or skillet with cooking spray and warm tortillas over medium heat until soft. Place warmed tortillas on a baking sheet, spread about a quarter of the bean mixture on each, and keep them warm in the oven.

Spray the griddle again and quickly fry the eggs to your preferred doneness (over-easy or over-medium). Remove the tortillas from the oven and top each with an egg, 1/4 cup of warm tomatillo sauce, and 1 ounce of cheese. Garnish with chopped cilantro and serve immediately.

Green Chile Egg Puff

This Green Chile Egg Puff is ideal for gifting to a new mom or serving when you want comforting, cheesy brunch fare. It’s golden, slightly spicy from green chiles and jalapeño cheese, and perfect for making ahead. It’s a family favorite in my daughter-in-law’s household—so good that I always request it when I visit.

Ingredients

10 eggs, beaten
1 tablespoon butter
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
16 oz small curd cottage cheese
1/2 cup butter, melted
1/2 lb Monterey Jack cheese, grated
1/2 lb Monterey Jack jalapeño cheese, grated
1 4-oz can chopped green chiles
1 lb cooked sausage, ham, or bacon (optional)

Instructions

Preheat the oven to 400°F. Butter a 9 x 13-inch glass baking dish with 1 tablespoon of butter. In a large bowl, combine the beaten eggs with the remaining ingredients. Pour the mixture into the prepared dish and bake uncovered for 15 minutes. Reduce the oven temperature to 350°F and bake an additional 30 minutes, until the top is lightly browned and set. Cut into squares and serve with salsa or guacamole and mimosas.

Baked French Toast with Pecan Crumble and Vanilla-Poached Apricots

If you love sweet brunch dishes, this baked French toast is for you. It can be assembled the night before and baked in the morning, or made right away if you’re pressed for time. The pecan crumble and vanilla-poached apricots elevate a classic into something special.

For the French toast

1 loaf French bread, cubed
8 eggs
2 cups whole milk
1/2 cup cream
1/2 cup sugar
1/2 cup brown sugar
2 tbsp vanilla extract
1/2 cup melted unsalted butter, cooled, plus more for greasing

For the topping

1/2 cup flour
1/2 cup brown sugar
1/2 cup chopped pecans
1 teaspoon cinnamon
1/4 teaspoon sea salt
1 stick cold butter, diced

Vanilla-poached apricots for serving

8 oz dried apricots
1 vanilla bean, halved lengthwise
1 cinnamon stick
1 1/2 cups water
1/2 cup sugar
2 tbsp honey
Pinch of sea salt

Instructions

Grease a 9 x 13-inch casserole dish with butter and arrange the bread cubes evenly inside. In a bowl, whisk together eggs, sugars, milk, cream, vanilla, and cooled melted butter. Pour the mixture over the bread, pressing the cubes so they absorb the custard. Cover and chill for at least 8 hours or overnight.

To make the crumble, pulse flour, brown sugar, pecans, cinnamon, and salt in a food processor until crumbly, or combine with a pastry cutter. Before baking, sprinkle the crumble evenly over the soaked bread. Bake uncovered at 350°F for about 1 hour, watching so the top doesn’t burn. Place a sheet pan under the casserole to catch any overflow.

While the French toast bakes, poach the apricots: scrape the vanilla bean seeds into a saucepan and add the pod, cinnamon stick, water, honey, and sugar. Simmer covered for 5 minutes to dissolve the sugar, then add the apricots and simmer, covered, until softened, about 30 minutes. Remove the fruit with a slotted spoon and reduce the poaching liquid until syrupy, about six minutes, then pour over the apricots.

Serve slices with butter, syrup, fresh berries, and a spoonful of vanilla-poached apricots.

Broccoli-Cheddar Quiche

This quiche packs in vegetables—broccoli, kale, and fresh herbs—so it feels lighter while still offering that comforting cheddar flavor. Baking it in a tart pan reduces excess crust and makes for an elegant presentation.

For the tart dough

1 1/4 cups all-purpose flour
1/4 tsp fine sea salt
7 tbsp unsalted butter, chilled
1/4 cup ice water, or more as needed

For the filling

2 cups broccoli florets, chopped
1/2 white onion, chopped
1/2 cup chopped kale, ribs removed
1 cup whole milk
3 large eggs
1 tbsp chopped fresh herbs (dill, parsley, chives, or similar)
Sea salt and freshly ground pepper
1 cup shredded sharp cheddar cheese
1/2 cup diced ham (optional)

Instructions

Make the crust by pulsing flour and salt in a food processor; add chilled butter and pulse until the mixture resembles peas. Add ice water slowly and pulse until the dough begins to come together. Form into a disk, wrap, and chill for 30 minutes to 2 hours.

On a floured surface, roll the dough into a 12-inch circle and press into a tart pan with a removable bottom. Trim the edges, prick the bottom with a fork, and blind-bake with foil and pie weights until the crust begins to color, about 20 minutes. Place the tart pan on a baking sheet to catch any runoff.

Meanwhile, blanch the broccoli for 5 minutes, drain, and pat dry. Sauté the onions and kale until softened, then combine with milk, eggs, herbs, salt, and pepper. Remove the weights and foil from the crust, pour in the filling, top with extra cheese, and bake at 350°F until set and golden, about 40 minutes. Allow to cool slightly before serving; it’s excellent warm or at room temperature.
