The technique is straightforward and reliable—use a brown sugar–forward rub to form a flavorful crust, sear the meat to lock in juices, then cook low and slow until the pork falls apart. The same rub also works well on ribs, pork chops, pork loin or any pork cut where you want bold flavor.

Why Sear First?
Searing the shoulder before it goes into the slow cooker builds a flavorful crust and helps lock in juices. A quick 2–3 minute sear per side over medium-high heat creates browning that caramelizes during the slow cook and adds depth to the finished pork. If you skip this step the meat will still be tender, but it won’t have the same caramelized exterior.
Oven Method for Our BBQ Pork
If you don’t have a slow cooker or prefer the oven, follow these steps:
- Preheat the oven to 450°F (232°C).
- Rub the pork shoulder with olive oil and the pork rub.
- Roast uncovered for 15 minutes, then flip and roast another 15 minutes to develop color.
- Lower the oven temperature to 300°F (149°C), cover the pork with foil, and continue cooking for about 2 hours or until the meat is tender and easily pulls apart. Cooking time will vary based on roast size; aim for an internal temperature near the bone of 195–205°F for maximum shreddability.

Serving Suggestions

Ingredients
- 1 (3–4 lb) pork shoulder
- 1 cup light brown sugar (not packed)
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon cayenne (adjust to taste)
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon celery salt
- 1 tablespoon sea salt
- 1 tablespoon black pepper
- Olive oil for searing
- Your favorite BBQ sauce, for tossing and serving
Instructions
- Pat the pork shoulder dry with paper towels.
- Combine the brown sugar and spices to make the rub. Drizzle the pork with olive oil and coat it generously with the rub, pressing it into the surface.
- Heat a large skillet over medium-high heat and add a little olive oil. Sear the shoulder 2–3 minutes per side, until the exterior develops a light char and a golden crust.
- Place the seared shoulder in the slow cooker. Cook on high for 30 minutes to start, then reduce to low and cook 5–6 hours, or until the pork is very tender and easily pulls apart. Aim for an internal temperature of about 195°F–205°F for best shredding results.
- Note: Sugar-based rubs can char at very high direct heat. The short sear recommended here should caramelize the rub rather than burn it—keep the pan temperature moderate and watch closely while searing.
- When the pork is done, remove it to a cutting board and shred or chop with forks. Pour your favorite BBQ sauce over the pulled pork and toss to combine, or serve the sauce on the side.
- Serve hot on buns, in tacos, or alongside a crisp slaw and your favorite sides.
