  • 3 cups buttermilk (or 3 cups milk + 3 tablespoons apple cider vinegar)
  • 1 teaspoon salt

Ingredients for Black folks soul food buttermilk fried chicken

  • 6–8 pieces chicken (or one 3‑lb chicken cut into pieces)
  • 48 oz peanut or vegetable oil
  • 2 cups all-purpose flour, divided
  • 1 ½ tsp garlic powder
  • 1 ½ tsp onion powder
  • 1 ½ tsp paprika
  • 1 ½ tsp salt
  • ¾ tsp red pepper
  • ¾ tsp black pepper
  • 1 egg
  • ½ cup buttermilk

Instructions

Buttermilk marinade (Instant Pot method or overnight)

  1. To make homemade buttermilk: stir 3 cups milk with 3 tablespoons apple cider vinegar and let sit 5 minutes.
  2. Add the buttermilk and 1 teaspoon salt to the Instant Pot inner pot and add chicken pieces, skin-side up. (If not using an Instant Pot, marinate the chicken in buttermilk for 4 hours to overnight.)
  3. Pressure cook on high for 10 minutes, then allow a natural release for 10 minutes. Move the valve to venting to release any remaining pressure and remove the chicken to cool.

Frying the soul food buttermilk chicken

  1. Pour oil 1 inch deep into a fryer, large skillet, or Dutch oven and heat to 350°F (175°C).
  2. Mix 1 cup flour with garlic powder, onion powder, paprika, and red pepper in a bowl or resealable bag. Place the second cup of flour in a separate bowl. Whisk ½ cup buttermilk with the egg in another bowl.
  3. Season the chicken with salt and pepper. Dredge first in seasoned flour, shake off excess, dip in the buttermilk-egg mixture, then coat again in the plain flour until well covered.
  4. Fry the chicken skin-side down without overcrowding the pan. Maintain oil at 350°F and cook 10–12 minutes, turning occasionally so it browns evenly.
  5. When golden brown, remove and drain on paper towels in a covered container to keep warm. Serve immediately and enjoy.
