I love receiving care packages, and recently I got a box full of fresh corn delivered to my door. It was my first time having corn shipped straight to me, and I was excited to try it.
The corn I received is Amaize Sweet Corn, a naturally bred white variety with no GMOs. I don’t often buy white corn, so I was curious about the flavor and texture. Known for a crisp bite and pleasant sweetness, it seemed perfect for a Tex-Mex side to accompany the fajitas I was preparing.
Skillet corn is quick to make and pairs well with many mains. It complements Mexican dishes beautifully, but I also love it alongside grilled steak, pork chops, or chicken. In this recipe, corn, onion, and peppers are cooked with a pound of bacon so every forkful is packed with savory, smoky flavor and a little heat.
The Amaize Sweet Corn held up well against the bold flavors of bacon and jalapeño. The kernels stayed crisp and tasted sweet—delicious and satisfying as a side dish.

Skillet White Corn with Bacon

Ingredients
- 1 pound bacon slices , cut into small pieces
- 2 garlic cloves , minced
- 1 red onion , peeled and diced
- 1 red pepper , cored and diced
- 2 jalapeño peppers , cored and minced
- 8 ears of corn on the cob
- salt and pepper to taste
Instructions

Remove the kernels from the cobs by standing each ear on its base on a cutting board and slicing downward with a sharp knife.

In a large cast-iron skillet, cook the bacon pieces over medium heat until they begin to brown and crisp.

Carefully drain off excess bacon grease, leaving about 3–4 tablespoons in the skillet with the bacon for flavor.

Add the minced garlic, diced red onion, diced red pepper, and minced jalapeño to the skillet. Sauté for a few minutes, stirring frequently until the vegetables soften.

Stir in the corn kernels and continue to cook until the corn is tender and cooked through, about 7–10 minutes.

Season with salt and pepper to taste, adjusting heat with more or less jalapeño as desired.

Serve hot as a flavorful side with fajitas, grilled meats, or any meal that could use a sweet and smoky complement.
