Coconut Chick Cookies Recipe: Crispy, Chewy Treats

If you haven’t tried these, I highly recommend this macaroon recipe. Every recipe I share has been tested and approved by many people — family, friends, and their families — so I don’t post anything mediocre.

More than one person has called this the best macaroon they’ve ever tasted, whether vegan or not. Don’t be afraid to serve these to even the pickiest Easter guests:

Anywhoos… I’ve reposted the macaroon recipe below for convenience, with chick decorations noted at the end. The chick idea came from a Taste of Home Easter magazine; their version used licorice, jelly beans, and chocolate chips.

Baby Chick Macaroons

(Makes 12–14)

  • 1 cup shredded, unsweetened coconut (see below for a lower-calorie version)
  • 1 tbsp flour of your choice (such as whole-wheat pastry or coconut flour)
  • 1/2 cup plus 2 tbsp lite canned coconut milk (or regular canned coconut milk)
  • 3 tbsp agave syrup or pure maple syrup
  • 1 packet stevia (or 1 more tbsp agave; if using extra agave, reduce the liquid slightly)
  • 1/4 tsp pure vanilla extract
  • just over 1/16 tsp salt

Combine all ingredients in a tall dish and microwave for 3 minutes, or cook on the stovetop until the mixture is firm enough to scoop. Scoop into balls on a cookie tray — a melon baller, spoon, or small ice-cream scoop works well. Bake at 360°F (about 180°C) for 14–16 minutes, or until golden. Let cool before removing from the tray. Makes around 12–14 cookies.

For the chicks: once the cookies are cooled, decorate using whatever you have on hand. I used pecans and almonds for wings and beaks, cacao nibs for eyes, and goji berries for color. You can also make bunnies or other animals — the decorating possibilities are endless.

Or, yes, you could make owls.

This was such a simple and fun cookie-decorating project that I plan to make more macaroon animals. What about monkey cookies with pretzel tails, or spinach-blended macaroons shaped like Easter frogs?
