I’m sharing this recipe as part of a themed event focused on recipes that incorporate spirits, extracts, or other alcohols; I chose almond extract to highlight the signature flavor. Almond adds a delicate, aromatic note that many people—children and adults alike—associate with classic sweets and ice creams. This modern take on a traditional Chinese dessert keeps the flavor profile authentic while using accessible, pantry-friendly ingredients.

When I was growing up, Chinese almond float was a favorite summer treat. Historically, it was often served with canned fruit cocktail — perhaps because fresh tropical fruits were not always easy to find and the syrup from canned fruit added sweetness. Today, with fresh fruit widely available, this dessert is best enjoyed with juicy, ripe pieces of mango, pineapple, and, when possible, longan or lychee for a more authentic touch.

Traditional recipes sometimes used ground almonds and agar-agar to create the gelatinous base. For convenience and to accommodate dairy-free diets, this version uses almond milk and unflavored gelatin. The texture is silky and tender rather than rubbery, and the almond extract gives it that recognizable floral, nutty aroma. A splash of homemade simple syrup keeps the fruit bright and gently sweet without overpowering the delicate almond flavor. Garnish with a dye-free maraschino cherry if you like a nostalgic finish.

Ingredients

  • 2 envelopes unflavored gelatin
  • 1 3/4 cups cold water
  • 3 tablespoons organic sugar
  • 1 1/2 cups almond milk
  • 1 tablespoon almond extract

Organic Simple Syrup

  • 1 cup organic cane sugar
  • 1 cup water

For Serving

  • Fresh mango, diced
  • Fresh pineapple chunks
  • Fresh longan or lychee, if available
  • Dye-free maraschino cherries

Instructions

  1. Pour 1/2 cup cold water into a small bowl. Sprinkle the gelatin evenly over the surface and let it sit for a minute, then stir gently until it begins to dissolve.
  2. Bring the remaining 1 1/4 cup water to a boil in a small saucepan. Stir in 3 tablespoons of organic sugar until completely dissolved. Remove from heat and pour the hot sugar water over the gelatin, stirring until the mixture is clear and the gelatin is fully dissolved.
  3. Stir in the almond milk and almond extract until well combined. Pour the mixture into a 9″x13″ pan or a similar shallow dish. Chill in the refrigerator until fully set, which usually takes a few hours.

Make the Organic Simple Syrup

  1. Combine 1 cup organic cane sugar and 1 cup water in a small saucepan. Bring to a gentle boil, stirring until the sugar is dissolved. Remove from heat and let cool completely. Store in the refrigerator. You will only need a small amount to drizzle over the fruit when serving.

To Serve

  1. Cut the chilled almond gelatin into squares. Spoon the pieces into individual serving bowls or glasses. Top with diced mango, pineapple chunks, and longan or lychee if you have them. Add a dye-free maraschino cherry to each serving and drizzle lightly with the organic simple syrup for extra brightness.

Notes & Tips

This recipe is adapted from a traditional Chinese almond float concept. Use full-flavored almond milk for a stronger almond profile, or substitute regular milk if you do not need a dairy-free option. For a vegetarian version, replace the gelatin with agar-agar following the manufacturer’s conversion guidelines.

Chilling time varies with refrigerator temperature; allow at least 2–3 hours for a firm set. The simple syrup can be flavored with a strip of citrus peel or a vanilla bean while it simmers for a subtle twist. Leftovers keep well in the refrigerator for 2–3 days, though the fruit is best when fresh.

Enjoy this light, fragrant Chinese Almond Float with Fresh Fruit as a refreshing summer dessert. Its silky almond base and vibrant fresh fruit make it a balanced, elegant finish to any warm-weather meal.
