They’re still light, soft, and delicious, yet much faster to pull together. If you want homemade bread on the table tonight without spending hours in the kitchen, these are a great option.

My kids don’t fuss over which roll we serve—they just want plenty of homemade strawberry or raspberry jam to spread on top. Add a smear of fresh jam and the rolls become irresistible.

For longer storage, freeze the cooled rolls in a freezer-safe bag or wrapped in plastic and foil. Frozen rolls keep well for up to six months.

How Can You Tell if Your Yeast is Good?

Test active dry yeast quickly: dissolve 1 teaspoon sugar in 1/2 cup warm water, sprinkle one packet of yeast on top, stir, and let sit for about 10 minutes. After a few minutes the mixture should begin to foam and rise. If a foamy layer forms within 10 minutes, the yeast is active. If no foam appears, the yeast is no longer good and should be replaced.

Ingredients

  • 1 Tablespoon Rounded Active Dry Yeast + 1/2 Teaspoon Sugar
  • 3 Tablespoons Sugar
  • 1/2 Cup Warm Water
  • 1 1/4 Cup Milk, Scalded
  • 4 Tablespoons Butter
  • 1 teaspoon Salt
  • 2 Eggs, Beaten
  • 4 Cups Flour, plus more for kneading and surface

Instructions 

  • Sprinkle the yeast and 1/2 teaspoon sugar over the warm water and let it sit until foamy.
  • Melt the butter in the scalded milk, then cool the mixture until lukewarm.
  • In a bowl, combine the beaten eggs, 3 tablespoons sugar, salt, and the dissolved yeast.
  • Stir the cooled milk and butter into the egg mixture.
  • Add the flour and stir until a dough forms.
  • Knead the dough on a well-floured surface until smooth.
  • Shape the dough into rolls—pinch into balls or roll into strips and tie knots, whichever you prefer.
  • Bake at 400°F (200°C) for 10–12 minutes, or until golden.

Recipe Notes

To freeze: cool completely, then wrap tightly in plastic and foil or place in a freezer bag. Freeze for 2–3 months.
