How to make homemade whiskey toffee chips

You can certainly buy toffee chips, but if you want the best toffee chocolate chip cookies, make your own chips. The process is quick and yields a richer, fresher flavor than packaged toffee.

The recipe uses just four basic ingredients: 1/2 cup (1 stick) butter, 1/2 cup white sugar, 1 tablespoon whiskey and 1 tablespoon water, plus a pinch of salt. If you prefer no alcohol, use 2 tablespoons water. For more whiskey flavor, substitute both tablespoons with whiskey.

Combine the butter, sugar, whiskey and water in a small saucepan. Heat over medium-high until the butter melts and the mixture reaches a rolling boil. Use a reliable burner or your preferred heat source and keep a close eye on the pot.

Let the toffee cook without stirring until it reaches the hard-crack stage, about 300–305°F (150–152°C). This usually takes around eight minutes and the mixture will turn an amber caramel color. Watch carefully since the toffee can go from perfect to burnt very quickly.

When it hits the correct temperature and color, pour the hot toffee onto a lined baking sheet. Silicone liners like Silpat work well because nothing sticks to them. Spread the toffee to your preferred thickness and allow it to cool and harden.

Once firm, break the toffee into small pieces for cookies or leave larger pieces for candy. You can optionally sprinkle chopped nuts, grated chocolate or flaky sea salt on top while the toffee is still warm for extra texture and flavor.

Ingredients

  • 1/2 cup butter (1 stick)

  • 1 tbsp Jack Daniel’s whiskey
  • 1 tbsp water
  • pinch salt

Instructions

  • Place all ingredients in a saucepot over medium-high heat and stir until the butter melts.
  • Bring to a boil and allow to boil without stirring for about 8 minutes, or until the mixture turns amber and reaches 300–305°F (hard-crack stage).
  • Pour the hot toffee onto a lined baking sheet and spread to your desired thickness. Let it cool and harden.
  • Once firm, crack the toffee into pieces. Use small bits for cookies or larger pieces to enjoy as candy.

This recipe yields about 1 1/2 cups of toffee chips.

No whiskey? Use 2 tablespoons water instead. For a stronger whiskey flavor, use 2 tablespoons whiskey and omit the water.
