This Cacio e Pepe Chicken and Rice is a weeknight favorite that finishes in the oven. Juicy chicken thighs and aromatic U.S.-grown basmati rice are coated in a creamy Pecorino and pepper sauce, making an easy, one-skillet meal great for meal prep.

Ingredients

  • 5–6 boneless, skinless chicken thighs
  • Freshly cracked black pepper, to taste
  • Kosher salt, to taste
  • 1–2 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 1 shallot, finely chopped
  • 4 cloves garlic, minced
  • 1 cup U.S.-grown basmati rice
  • 1 1/2 cups chicken broth
  • 1 cup Pecorino Romano, finely grated, plus more for garnish
  • 1/2 cup heavy cream
  • Juice of 1/2 lemon (about 2 Tbsp)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Pat the chicken dry and season generously with salt and freshly cracked black pepper.
  3. Heat the olive oil in a large cast-iron or heavy-bottomed skillet over medium heat. Brown the chicken 3–4 minutes per side until golden. Transfer to a plate.
  4. Add butter to the pan. Sauté the chopped shallot with a pinch of salt until soft, then add garlic and cook 30 seconds until fragrant.
  5. Add the basmati rice and stir to coat with the butter and aromatics. Cook about 1 minute.
  6. Pour in the chicken broth and bring to a simmer. Stir to combine, then mix in the Pecorino, heavy cream, and lemon juice until evenly incorporated.
  7. Turn off the heat. Nestle the browned chicken into the rice, cover the pan tightly with foil, and transfer to the oven. Bake 30–35 minutes, until the rice is tender and the chicken reaches 165°F. Let rest a few minutes so the rice absorbs any remaining liquid.
  8. Season to taste with more salt and pepper. Serve with extra Pecorino and chopped parsley if desired.
