A tasty potato salad with a lighter dressing that still delivers classic flavor.

Equipment

  • Medium stock pot or saucepan to boil potatoes

Ingredients

  • 3 pounds Potatoes, preferably Yukon Gold
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 tsp Sucanat
  • 1 tbsp Mustard, preferably grainy
  • 1/2 cup Apple cider vinegar
  • 2 tbsp Olive oil
  • 1 bunch Green onions, sliced thinly
  • 4 slices Bacon, cooked and chopped fine

Instructions

  • Peel the potatoes and cut them into bite-sized pieces.
  • Boil the potatoes in well-salted water for about 10 minutes, or until fork-tender.
  • While the potatoes cook, make the dressing: combine apple cider vinegar, salt, black pepper, Sucanat (or sugar), and mustard in a jar with a tight lid. Shake until fully mixed.
  • Remove the lid and add the olive oil, replace the lid, and shake again to help the dressing emulsify.
  • Drain the potatoes and transfer them to a serving bowl. Pour the hot dressing over the potatoes and toss gently so the warm potatoes absorb the flavors.
  • Stir in the sliced green onions and chopped bacon. Toss to combine and serve hot or at room temperature. Enjoy!
